Ramen is a Japanese noodle soup. It’s the perfect dish to satisfy your cravings on a cold and/or rainy day. It consists of Chinese wheat noodles served in pork or fish-based broth, often flavored with soy sauce or miso, and uses toppings such as sliced pork, nori, egg, and scallions. But vegan ramen does exist. There are tons of vegan ramen spots in Los Angeles. However, you can whip up easy vegan recipes at home. I asked some of the top vegan recipe creators on Instagram to share with us their favorite recipes using vegan ramen noodles. Here are 5 Easy Vegan Ramen Recipes You’ll Love. 

Main Ramen Ingredients: 

  1. The broth
  2. The noodles
  3. The toppings

Vegan broth:

Vegan broth can be made many different ways. You can use vegetable broth infused with white miso paste, ginger, onion, garlic and dried shiitake mushrooms. 

Vegan Ramen Noodles:

  • Ramen are thin, wheat-based noodles made from wheat flour, salt, water, and kansui (a form of alkaline water).
  • Fresh vegan ramen noodles are more common in major cities or can be purchased at Amazon.
  • Instant vegan ramen noodles are also made from wheat flour, but fried then dried before packaging. It is not the healthiest choice since high in sodium and MSG. 

Vegan ramen toppings:

  • tofu,
  • bamboo shoots,
  • seaweed
  • carrots
  • daikon radish
  • steamed bok choy
  • mushrooms
  • baby spinach
  • scallions
  • roasted vegetables

This is my own special recipe. Maybe you can find Pomegranate Ramen in Tokyo but I haven’t find it here in LA. The Pomegranate Ramen can be made in 10 minutes with left over sautéed veggies.
